I love how Sam's character develops as you go through the books; if you contrast his later appearances with his early portrayals, you can see how he changes, without ever feeling like you lose the quintessential things that make him Sam

I tend to find different characters catch my attention on re-reads, but I never don't love Sam, warts and all - he is a contradiction of complexity and simplicity and is, hands down, consistently my favourite character of the trilogy
